I think we all have our favourite applications. Here in lies a discussion regarding, politics, sex and religion. There are no winners, pick one you are interested in and ask help. This is the Open Source way, when no-one talks it is stable (gzip) or dead (precursor filesystems to ext2).

I am hacking through Open Office with a mechanical task of reducing the -Wall warnings. Relatively easy but giving me a good depth on the code. I pity the person that cannot find a project like this trying to go through [insert any large application].
